Raisin Bran Muffin Recipe


• 1 1/2 cups bran
• 1 cup buttermilk ( 1 cup milk with tbsp. lemon juice may be substituted for buttermilk)
• 1/3 cup vegetable oil
• 1 egg
• 2/3 cup brown sugar
• 1/2 tsp. vanilla
• 1 cup flour
• 1 tsp. baking powder
• 1 tsp. baking soda
• 1/2 tsp. salt
• 1/2 cup raisins


• Preheat oven to 375 degrees. Mix together bran & buttermilk. Let stand.

• Combine oil, egg, sugar and vanilla. Add to bran mixture.

• Sift together flour, baking powder, baking soda and salt. Add to first mixture and stir until just blended. Add raisins and spoon into prepared muffin pans.

• Bake 15-20 minutes. Makes about 12 muffins. One of these and a couple pieces of fruit make for a very nutritious start to your day.
